I used ground flaxseed as my go-to egg replacer.  To replace one egg, all you do is combine one tablespoon of ground flaxseed with two tablespoons of warm water.

Arugula with fresh edible flowers, dried cranberries, artichoke, pickled red onion. Served with a simple lime and olive oil dressing. Seasoned with s&p and a sprinkling of grated peppercorn romano.
